For a standard brick with a normal joint (10 mm), you typically figure around 60 bricks per m² for a single-leaf (half-brick) wall. Thicker walls or other formats give different figures.
Yes, bricks can vary somewhat in color between production batches. It's a good idea to buy a bit extra from the same batch in case you need more later in the project.
